This is the best summer salad recipe ever! Minimal ingredients, no fancy equipment needed and super simple to throw together. I crave this one daily so I find myself keeping these few ingredients on hand ALWAYS!
When it comes to a salad, everyone needs a simple go to recipe that won’t break the bank with endless ingredients and tastes really good. I grew up in a Greek-Italian household and I remember a giant salad on the table every night with dinner. When friends and family come over .. even now … they rave about these salads! It tickles me to know something so simple to create can have such a huge impact! This is my version of a traditional Greek Salad with a high protein twist.
How to make a Greek Salad Bowl with Chicken
The first step is of course is gathering your ingredients, a nice sharp knife and a cutting board. Pick a bowl that’s perfect for a single serving. Something not too big and not too small.
Ingredients
Cucumber - Skin on or off, you choose
Tomatoes - I like cherry tomatoes
Onion - white or red
Feta Cheese
Extra Virgin Olive Oil
Dried Mint Leaves - If you don’t like mint, try oregano or italian seasoning
Salt & Pepper
Plain Greek Yogurt (optional)
I don’t have measurements for this recipe. But here is a visual above of my single serving bowl. Chop these ingredients however you like and pick the ratios your prefer. I enjoy an even amount of cucumbers, tomatoes and red onion. For feta I like a decent amount to coat all the ingredients once it’s crumbled.
Now for the High Protein Part
Today I used chicken thighs, but you can totally switch it up and use chicken breast, steak, shrimp, tofu … honestly anything you like!
Whichever protein you choose MAKE SURE YOU SEASON IT! Today I’m using this premixed Italian chop house seasoning from Kinder’s. I really like the flavor. It works well in this dish. Be sure to season both sides!
Cooking your Protein
Like I said, no fancy equipment is required, so feel free to use your oven or stove stop to cool your protein. I really like the way my air fryer cooks chicken thighs so I chose that rout. I just spray the protein with some olive oil to help get a nice crispy crust!
Putting your Bowl Together
Once you have chopped your cucumbers, tomatoes, onions and feta cheese and added it to a bowl, it’s time to dress the salad!
Pour in about 2 tbsp of extra virgin olive oil, half a tbsp of crushed dried mint leaves and some salt and pepper to taste.
Top with your protein.
I also like to add some plain greek yogurt to the top for extra protein! I put greek yogurt on just about anything. This part is totally optional!
